- Preheat the oven to 200°C. Brush one side of each French bread slice with olive oil. Place the sliced bread, oiled side up, onto a baking sheet. Place in the oven and toast until the edges are browned and crisp, but the centre is still soft.
- Layer the sliced cherry tomatoes and Brie over the bruschetta. Top with capers and rocket. Season with salt and freshly ground black pepper.
