- Preheat oven to 220°C, with racks in top and bottom thirds of the oven. Grease a baking sheet.
- Place the egg in a bowl. In another bowl, combine oats, flour, lemon zest, lemon juice, salt and pepper. Dip each fish into the egg, then roll it in the oats mixture, patting the fish and pressing the mixture in place to adhere. Arrange on the baking sheet.
- Drizzle the fish with some olive oil and bake at the lower part of the oven for 7 minutes, then in the higher third for another 7 minutes. Serve with a fresh salad, a lemon wedge, and more salt to taste.
