- Preheat the oven to 220°C.
- Combine the beef mince, onion, garlic, zucchini, carrots, egg and parsley in a large bowl. Season with salt and black pepper to taste.
- Roll the mince mixture into bite-sized balls. Place them on a roasting pan. Press a little hole in the middle of each meatball and press a strip of Melrose Sweetmilk Wedges into the cavity. Drizzle with olive oil.
- Roast in the oven for 20-25 minutes or until golden brown. Serve warm or at room temperature.
