Preheat the oven to 200°C. Brush one side of each French bread slice with olive oil. Place the sliced bread, oiled side up, onto a baking sheet. Place in the oven and toast until the edges are browned and crisp, but the centre is still soft.
Layer the sliced cherry tomatoes and Brie over the bruschetta. Top with capers and rocket. Season with salt and freshly ground black pepper.
