Halloumi Fries


  1. Heat a shallow pool of oil in a large frying pan. Thoroughly pat the halloumi dry before adding to the pan and cook, turning until golden brown on all sides.

  2. Tip into a bowl, add the drizzle a little lemon juice over and toss.

  3. Mix the paprika, ginger and coriander with the yoghurt and season with salt.

  4. Put the fries on a platter, drizzle over the yoghurt then sprinkle with roughly chopped fresh mint. Eat immediately.
